Regen Fest Day

The ultimate Regen Fest day — regenerative living, wellness, and whole-animal craft on working ground. Three sessions with the Meatsmith anchor it; roping, blacksmithing, livestock, a tethered balloon and the vendor market run all around them, pausing only when the whole crowd gathers.
The day, hour by hour
Gates Open
Vendors, livestock stations, the wellness garden and the tethered balloon all come to life at once.
Butchery
We will portion the pig without trimming or throwing anything into the waste bin. There is nothing superfluous on the carcass; the pig gave it all. Fat, skin and bone are part of the yield, which means that 100% of hanging weight will be turned into food. The traditions of the home kitchen will guide us so we can unite thrift and extravagance in equal measure.

Opening Presentation
The 84 Ranch story — leaving a corporate career to farm and ranch regeneratively, and why soil health and honest food are the point of the whole weekend.
Choose Your Experience
Three hands-on classes running at once across the ranch. Commit to one, or move between them and take a little of each.
Whole Hog Roast Reveal
A hog roasted through the night comes open in front of the crowd. Gloves on — pull the pork yourself as we walk the cuts.
Pig Races & Greased Pig Catching
Live races in the arena, then greased pig catching for anyone bold enough to try. The loudest, best hour of the day.
Curing
Cured meat is preserved, not merely flavored. We will cure the abundant yield of the backyard pig so that the flesh keeps, never spoiling even in the ambient temperatures of the home kitchen. This is the peasant art of preserving meat without a freezer, resulting in what is unarguably more delicious and subtle than any pork it is possible to purchase. With only three ingredients — salt, pork and time — we will cure prosciutto, bacon, guanciale and coppa.

Roping Competition
Side-by-side team roping, horses and the ranch donkey on hand. Pick a side and holler.
Bonfires Lit
The day's stations close and the evening begins to gather.
Opening Act
Live music as the fires take and the food comes out.
Ghost Gumbo
Two full hours around the bonfires, food and drink to the last song.
The Day Closes
Camping guests stay on the property overnight.
Running all day Saturday
Wander in and out of these all day long. They pause while a featured session is on, and reopen the moment it lets out.
Day One
Friday night is the benefit.
A harvest done the old way, supper around one long table, and a night of giving that puts young farmers and ranchers on ground of their own.
